Day 102 - April 12, 2010

A couple of days ago, I was faced with a daunting decision - buy a bunch of freshly picked basil, or buy a potted basil plant. Those who know me know that I can't keep any plant alive, no matter how "unkillable" it may be. I knew that I wouldn't ever finish the giant bunch of basil before it went bad, so I made the choice to buy a potted basil plant. Well, so far, I've had it for four days, and it's still going strong! If I can keep this plant alive, hopefully it will open the door to more potted herbs - because that would just be so much better for cooking than the dried stuff! I can just picture being able to use fresh rosemary, thyme, chives, sage, basil and parsley - yummy! So hope and pray that this little basil plant makes it! I'm sure gonna try!

Day 44 - February 13, 2010

I love to cook - and I love to experiment, even though I am a super picky eater. I don't always eat what I create, but that's what Eric is for! Recently we've been all about enchiladas. They are super easy to make and very tasty too. Tortilla with refried beans, seasoned beef, cheese and sauce, baked until bubbly and golden brown. Today, I thought it might be kind of fun to put an italian twist on the enchilada - this is a pizzilada! Instead of the beans and beef, we've got pizza toppings (mine had onions, Eric had sausage, pepperoni, mushrooms and onions) with some sauce and cheese, wrapped in a tortilla and baked with some ooey gooey goodness. Yummy? You bet! Definitely something I'll be making again!

Day 19 - January 19, 2010

I love to cook! My friends know that I host tailgating on football Sundays not only because I love watching football, but because I love cooking food for everyone. Sure, that means preparing every weekend for it, trying new recipes and frequently making things that I don't even eat (the crummy side of being a picky eater), but it's so enjoyable for me! Eric probably doesn't mind either too much, as he gets to benefit from my enjoyment of cooking quite frequently! Anyways, of all my kitchen equipment, these two gadgets are by far my favorite. My salt and pepper grinders are not only handy in the kitchen, I think they make a great subject for a still life photo! Talk about a multipurpose kitchen gadget ;) Alton Brown would be proud...
